Ingredients:

• 1/2 kg – sponge cake
• 1 cups – Milk
• 1/2 cup – black coffee
• 1/4 cup – Curd cheese (chilled)
• 1/2 cup – Sugar
• 1/4 cup – Maida
• 1/4 cup – light rum
• 1/4 cup – Butter
• 3 – Egg yolks
• 1 tsp – vanilla
• 2 tbsp – cocoa

Method:

  1. Cut the sponge cake into thin slices.
  2. Mix some milk with Maida.
  3. Mix the remaining of milk with sugar and place on fire. Keep stirring till sugar dissolves completely.
  4. When the milk starts boiling, remove from fire.
  5. Beat the yolks with vanilla.
  6. Mix in the remaining milk and Maida.
  7. Pour about 1/2 of the hot milk gradually into the yolk mixture, stirring all the time.
  8. Pour it into remaining hot milk and place on slow flame.
  9. Cook and stir till the mixture comes to a boil.
  10. Remove from fire and gradually beat in the butter. Add rum.
  11. Cool and chill in the fridge
  12. Beat in the curd cheese.
  13. Cut the cake into thin slices.
  14. Place 1/3 of cake slices at the base of a pudding dish.
  15. Add enough coffee on top to generously soak the cake. Spread 1/3 filling over it. Repeat the layers, ending with custard.
  16. Chill in the fridge.
  17. Just before serving, sprinkle cocoa on top and serve chilled.
