Ingredients:
• 1 cup – long grain Rice
• 2 tbsp – Garlic chopped,
• 3 tbsp – Olive or sesame oil
• 1/8 tsp – pepper
• 1/2 cup – Leek or Spring onions
• 1/2 cup – bell peppers (red, green and yellow)
• 1/4 cup – Carrots coarsely shredded
• 1 – green chillies, slit
• 1/2 tbsp – Vinegar
• 3 tbsp – peri peri sauce
• 2 tbsp – light soya sauce
• 1 tbsp – chilli Garlic sauce
Method:
- Heat oil in a wok on a high flame, add garlic and saute.
- Add the leeks, chilli and carrots, toss for 2 mins
- Add capsicums, sprinkle some salt and continue frying till they are half done.
- Add the rice evenly
- Mix all the sauces and pour on the rice evenly.
- Cook till done.
- Add pepper powder and toss on a high flame for 2 mins
- Serve hot.
