Ingredients:
• Potatoes, medium sized, half -boiled – 6 – 8
• Green chillies, finely chopped – 4
• Onion, finely chopped – 2
• Tomatoes, finely chopped – 2
• Coriander, finely chopped – 1 cup
• Ginger Garlic paste – 1 tbsp
• Garam Masala – 2 tsp
• Turmeric powder – 1 tsp
• Oil – 3 tbsp
• Shredded cheese (optional)
• Salt to taste.
Method:
- Cut each potato into 2 and scoop out the inner portion.
- Now, heat in a pan and shallow fry the potatoes until they are golden brown.
- For the stuffing:
- Heat oil in a pan, add onion and chillies to it. Saute until the onions turn pink. Then add the turmeric powder, ginger-garlic paste, tomatoes, garam masala and saute for 5 mins.
- Add salt and stuff the mixture into the potatoes.
- Place these stuffed potatoes in a pressure cooker and cook until 2-3 whistles.
- Garnish with coriander and shredded cheese.
