Ingredients:

• 3 cups – Wheat flour
• 1/2 cup – fresh curds
• 1 bunch Spinach (washed, drained and chopped)
• 1 tsp – Ghee or oil
• salt to taste

Method:

  1. Blend spinach and curds till smooth.
  2. Sieve together flour and salt.
  3. Add spinach mixture, a little at a time, and knead to make a soft pliable dough.
  4. Keep covered for 10-15 mins.
  5. Brush ghee over dough.
  6. Knead again, till smooth and elastic.
  7. Take a ping pong-sized ball and roll into a thin chapatti.
  8. Heat tawa (griddle), cook on one side, flip.
  9. Once brown spots begin to appear on the other side, flip again and help it puff up by pressing lightly with a wad of cloth.
  10. If desired, drizzle butter or ghee over it.
  11. Serve hot with vegetables or dal.
