Ingredients:

• 1 kg – Bitter gourd
• Salt to taste
• 4 tbsp – oil
• 2 tsp – cumin powder.
• 4 tsp – chilli powder
• 1 tsp – Turmeric powder

Method:

  1. Wash the bitter gourds, cut and scrape out the seeds inside.
  2. Slice into thin slices.
  3. Soak the slices in salt water and a pinch of turmeric for about 2 hours. This would remove a lot of its bitterness off.
  4. Drain and squeeze out the excess water.
  5. Mix with the chilli powder, cumin powder, turmeric powder, and salt.
  6. Heat oil in a pan and deep fry the bitter gourd slices till golden brown and crisp. Serve with ketchup.
  7. This tastes best with curd rice.
