Ingredients:

• Egg (boiled) – 6
• Onion (finely chopped) – 2 cups
• Potato – 2 (diced)
• Tomato (chopped) – 1 cup
• Ginger-garlic paste – 2 tsp
• Red Chilli powder – 4 tsp
• Garam Masala – 2 tsp
• Lemon juice – 1-2 tsp
• Fresh Coriander leaves
• Refined oil
• Water – 5 cups
• Salt to taste

Method:

  1. Heat oil in a pan.
  2. Fry the chopped onions until golden brown.
  3. Add ginger-garlic paste and stir for a while.
  4. Add the chopped tomato and stir-fry until soft.
  5. Add garam masala and red chilli powder and mix well.
  6. Add the potatoes and stir lightly.
  7. Add 2-4 cups of water and let the potato pieces boil.
  8. When the potatoes are done, add 1 more cup of water and the boiled eggs one by one.
  9. Add salt, stir lightly and mix well.
  10. Leave the curry to simmer for 2 mins so that the eggs absorb the spices.
  11. Add 1 or 2 tsp of lemon juice and mix well.
  12. Garnish with fresh coriander leaves.
