Ingredients:

• 2 tbsp. Sunflower oil
• 200 gms. sliced Onion
• 1 Clove garlic, chopped
• 2 tsp. Cumin seeds
• 1 tsp. ground Turmeric
• 1 tsp. mild chilli powder
• 400 gms. tomatoes, chopped
• 1 large potato, cubed
• 200 gms. Cauliflower florets
• 100 gms. ladies finger, trimmed
• 2 tbsp. Lemon juice

Method:

  1. Put the oil, onion and garlic in a microwave proof bowl, cover and cook on high for five minutes.
  2. Add cumin seeds, turmeric, chilli and chopped tomatoes. Cook for a further five minutes.
  3. Stir in the potatoes, cauliflower, okra, lemon juice and seasoning.
  4. Cook for 15 minutes. until vegetables are tender.
  5. Spoon into serving dishes.
  6. Serve with yoghurt and pickles.
