
Ingredients:
• 2 – medium sized Brinjals
• 1 tsp – cumin powder
• 1 tsp – coriander powder
• 0.5 tsp – Turmeric powder
• 1 – Onion
• 1.5 tsp – Red Chilli powder
• 1 tsp – Mustard Seeds
• Oil for frying
• Salt
Method:
- Cut the brinjals into thin pieces, soak in salt water for 2 mins.
- Heat 4 spoons of oil in a pan, add mustard seeds and chopped onion.
- Fry it till the onion becomes brown in colour.
- Then add the brinjal, cover and cook for 2 minutes. Keep stirring the contents after every two minutes or so.
- When the brinjals are fried, add turmeric powder, coriander powder, red chilli powder, cumin powder and salt.
- Sautee it for 2 more mins.
- Serve hot with chapathis.
