Ingredients:

• 4 – large eggs.
• 2 cups – low-fat milk.
• 1.5 cups – apples (peeled and sliced).
• 1.5 cups – granola.
• 1.5 tbsp – maple syrup.
• 1 tbsp – butter.
• 1 tsp – vanilla extract.

Method:

  1. Grease four 16-ounce ramekins with butter.
  2. Preheat oven to 375 degrees F.
  3. In a medium bowl, stir together granola, fruit and maple syrup. Set aside.
  4. In a separate bowl, whisk together the eggs, milk and vanilla.
  5. Divide evenly among prepared ramekins.
  6. Add fruit mixture to ramekins in even amounts.
  7. Stir contents in each ramekin, just enough to mix.
  8. Bake for 25-30 mins or until set.
  9. This is great served with whipped cream.
