
Ingredients:
• 1/2 kg potatoes, boiled and peeled
• 1/4 kg Broccoli
• 1.5 cups Coconut Milk
• 2 tbsp yellow curry paste
• 2 onions, chopped finely
• 1/4 cup chopped Carrots
• 3 cups water
• salt to taste
• 1/8 tsp pepper powder
• 2 tsp oil
Method:
- Saute onion till transparent. Add water and carrots. Let it boil till the water is reduced to 2 cups.
- Method for curry:
- Boil the potatoes.
- Cook broccoli till half cooked.
- Heat oil in a pan.
- Heat the other pan.
- Put yellow paste and 2 tbsp of coconut milk.
- Stir till the mixture becomes dry.
- Add 2 tbsp of broth and continue stirring.
- When oil separates, add rest of the coconut milk.
- Add 1.5 cups of vegetable stock.
- Bring it to a boil.
- Add potatoes and broccoli.
- Let it cook till you get the required consistency.
- Serve with rice.
