Ingredients:
• 1 cup – Barley flour
• 1 cup – Grated mixed veggies (carrot, radish, zucchini, Broccoli and cabbage)
• 1 tsp – Ajwain seeds
• Salt
• Oil
Method:
- Add enough salt to the vegetables and keep aside for few minutes.
- Add the vegetables to the whole wheat flour, barley flour and ajwain seeds.
- Gradually add the water left by the vegetables, plain water and salt (if needed).
- Knead everything as a soft dough. Keep aside for half an hour.
- Make medium-sized balls from the dough.
- Dust with enough flour and roll as slightly thick circles.
- Drop the flattened paratha over a hot tawa gently.
- Drizzle the oil and cook on both sides until they get well cooked.
- Enjoy with coconut chutney.
