Ingredients:

• 1/2 kg – mixed vegetables (peas, cauliflower, French beans or any seasonal vegetables)
• 1/2 cup – fresh Coconut (scraped)
• 1 large bunch each – Mint and Coriander leaves
• 3 – Green chillies (chopped)
• 1/2 inch piece – Ginger
• 2 Cloves – Garlic
• A few peppercorns
• 1/2 tsp – cumin
• A small ball – Tamarind
• 1 – large Onion (chopped)
• Salt to taste
• Curry leaves (optional)
• 1 – large Tomato (optional)

Method:

  1. Cut the vegetables into small pieces and set aside.
  2. Grind together the coconut, coriander, mint leaves, green chillies, ginger, garlic, peppercorns, cumin and tamarind.
  3. Fry the onion in oil or ghee till brown, then fry the vegetables lightly.
  4. Add the ground masala, salt, tomato and the curry leaves.
  5. Cover with water and cook till the vegetables are tender.
