Ingredients:
• 1 bunch – Asparagus
• 2 tbsp – Sesame powder, coarsely ground
• 1/2 tsp – Aamchur powder
• Coriander – to garnish
• Coarsely grated Coconut – to garnish
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Mustard Seeds
• Chilli powder, Turmeric powder, Jeera powder, coriander powder, salt, Sugar – to taste
Method:
- Cut the asparagus into 1/2-inch pieces.
- Pressure cook them for about 6-7 whistles.
- Then take the asparagus out, mash and keep aside.
- Heat 6-7 tbsp of oil in a flat pan.
- Add mustard seeds, and cumin seeds and let it splutter.
- Add the chilli powder, turmeric, jeera, coriander powder, amchur powder and salt according to taste.
- Add the mashed asparagus and cook for 6-7 minutes, stirring occasionally.
- Add sugar and sesame powder and cook for another 3-4 minutes.
- Garnish with coriander and coconut.
