Ingredients:

• 3 – firm big Tomatoes
• 1 – Onion chopped fine
• 1/2 cup – carrot, peeled and grated
• 1/4 cup – coriander, finely chopped
• 1/4 cup – green chutney
• Freshly powdered Cumin seeds (jeera)
• Salt to taste
• 1 cup – puffed Rice cleaned

Method:

  1. Slice tomatoes into thick slices. Arrange on the plate side by side.
  2. Dot each slice with both the chutneys.
  3. Sprinkle salt and jeera powder.
  4. Sprinkle the grated carrot and then the onion on all slices.
  5. Sprinkle the puffed rice on top.
  6. Garnish with chopped coriander. Serve immediately.
