
Ingredients:
• Carrot – 250 gm
• tinned Pineapple 2 to 3 slices
• Ginger 3 cm
• soya/sunflower oil – 1 tbsp
• Orange juice – ¼ cup
• Lime juice – 1 tbsp
• dark soya sauce – 2 tsp
• Sugar – 1 tsp
• Coriander leaves – 2 tbsp
• pepper to taste
• salt to taste
Method:
- Peel and cut carrots into match sticks.
- Drain the pineapple slices and chop and mix with carrots.
- Crush the ginger and squeeze the juice.
- Combine ginger juice with oil, orange juice, lime juice, Soya sauce, salt, pepper and sugar.
- Pour over the carrot pineapple mixture and toss well.
- Serve garnished with coriander leaves.
