Ingredients:
• 1.25 cups – all purpose flour
• 1/2 tsp – baking powder
• 1/4 tsp – salt
• 1/2 cup – Butter
• 1/2 cup – packed Brown sugar
• 1/2 cup – white Sugar
• 1 – Egg
• 1.5 – flaked Coconut
Method:
- Preheat oven 350 deg f (175 deg c).
- Combine flour, baking soda, salt, set aside.
- In a bowl, cream butter, brown sugar, white sugar until smooth.
- Beat in the egg and vanilla until it is light and fluffy.
- Gradually blend in the flour mixture.
- Then mix the coconut.
- Drop tspfuls on to an ungreased cookie sheet.
- Cookies should be 3 inches apart.
- Bake for 8-10 mins until lightly toasted.
- Cool on wire racks.
