Ingredients:

• 10 – Brinjals
• Tamarind – a small ball (soaked in water and pulp extracted)
• 4 tsp – coriander powder
• 3 tbsp – oil
• Salt as per taste
• To grind:
• 2 tbsp – roasted Peanuts
• 4 – Tomatoes
• 4 pods – Garlic
• 10 – Red Chillies (soak in water)
• 5 – Curry leaves

Method:

  1. Slit the brinjal half way; it has to be whole, so do not make pieces.
  2. Put them in water so that the colour will not change. Keep aside.
  3. Dry roast the peanuts and grind. Add all the other ingredients given for grinding and make a smooth paste.
  4. In a cooker, heat 3 tbsp of oil, add brinjal, and fry for 5 minutes.
  5. Then add the ground paste, tamarind pulp, coriander powder, and 2 cups of water and pressure cook.
  6. Switch it off after 2 whistles.
  7. This is the best side dish for pulao or any variety of rice, like coconut rice.
