
Ingredients:
• 10 – Brinjals
• Tamarind – a small ball (soaked in water and pulp extracted)
• 4 tsp – coriander powder
• 3 tbsp – oil
• Salt as per taste
• To grind:
• 2 tbsp – roasted Peanuts
• 4 – Tomatoes
• 4 pods – Garlic
• 10 – Red Chillies (soak in water)
• 5 – Curry leaves
Method:
- Slit the brinjal half way; it has to be whole, so do not make pieces.
- Put them in water so that the colour will not change. Keep aside.
- Dry roast the peanuts and grind. Add all the other ingredients given for grinding and make a smooth paste.
- In a cooker, heat 3 tbsp of oil, add brinjal, and fry for 5 minutes.
- Then add the ground paste, tamarind pulp, coriander powder, and 2 cups of water and pressure cook.
- Switch it off after 2 whistles.
- This is the best side dish for pulao or any variety of rice, like coconut rice.
