
Ingredients:
• Cauliflower – 1
• Onions – 3
• Garlic – 8 flakes
• Ginger – small piece
• Tomatoes – 4
• Cumin – 1 tsp
• Chilli powder – 2 tsp
• Corinder powder – 1/2 tsp
• Turmeric powder – 1/4 tsp
• Oil – as needed
• Salt – to taste
• Maida all-purpose flour – 1 cup
• Garam Masala powder – 1/2 tsp
• Red Chilli powder – 1 tsp
• Garnishing:
• Grated cheese – 2 tsp
• Coriander leaves – 1 tbsp
Method:
- Wash and cut the cauliflower into small florets. Cook for 2 mins
- Mix maida, garam masala, red chilli powder, salt and water without any lumps
- The batter should be a little thick
- Dip the cauliflower in this batter and deep fry in the oil till light brown and keep it aside.
- Heat oil in another pan. Fry onions, ginger and garlic. Allow to cool.
- Grind these onions, the ginger and garlic into a smooth paste.
- Blanch tomatoes in hot water and remove the skin and make it into a paste
- Heat oil, season with cumin and then add the onion-ginger-garlic paste and fry until the raw smell goes.
- Add tomato paste and fry for 5 mins
- Add red chilli powder, coriander powder, turmeric powder and salt to that paste and allow it to boil.
- When it starts boiling, add fried cauliflower. Allow it to boil further until the gravy becomes thick.
- Sprinkle some grated cheese and garnish with coriander leaves.
