
Ingredients:
• 1/2 cup – Oil
• 2 – eggs
• 1 cup – Sugar, powdered
• 1/2 tsp – Soda bi-carbonate
• 1/2 tsp – Baking powder
• 1 cup – Maida
• 2 tsp – Cinnamon powder
• 1 tsp – Essence, vanilla
• 1.5 cup – Carrots, grated
• 1/2 tsp – Salt
Method:
- Mix the oil, eggs, and sugar with a hand mixer.
- Then add the flour, dry ingredients, and vanilla essence. Mix again.
- Fold in the grated carrots and bake at 145 degrees for 45 to 60 minutes.
