
Ingredients:
• 500 g – Brinjals
• 2 – Tomato
• 2 – Potato
• 2 – Onion
• 5 tbsp – coriander powder
• 3 tbsp – oil
• 1 pinch – Sugar
• 5 sprigs – Coriander leaves
• To taste – Red Chilli powder
• Salt
Method:
- Wash and cut the brinjals into four segments retaining the stem
- Cut tomato, potato and onion into fine pieces
- Add red chilli powder, salt, coriander powder, chopped coriander leaves, sugar and oil and mix it well
- Stuff this mix into the cut portions of brinjal
- Now place all the stuffed brinjals into a kadai
- Add half a glass of water
- Close the kadai with a lid and keep it on high flame for about 3-4 mins till the gravy starts boiling
- Reduce the flame and let it cook for 20 mins in sim till done
- Serve as a side dish for rice.
