Ingredients:

• 1 cup – yellow pumpkin, potatoes, carrots, beans, peas (all cut into similar sized cubes)
• 1/2 cup – moong dal
• 4-5 – Green chillies
• 10-12 – pepper Corns
• 3 tbsp – Coconut
• Curry leaves, a few
• 1 tbsp – oil
• 2 tsp – Urad Dal
• 2 tsp – mustard
• Salt to taste
• Turmeric powder, a pinch

Method:

  1. Pressure cook all the vegetables with the moong dal, add a little salt and turmeric powder.
  2. Grind the coconut, green chillies and pepper corns to a smooth paste.
  3. Once the veggies and dal are cooked, transfer to a kadai.
  4. Then add the ground paste and cook till the raw smell disappears.
  5. The kootu should have a semi-solid consistency, so add minimum water while cooking the veggies.
  6. Heat oil in a small fry pan, add the curry leaves, mustard and urad dal.
  7. When the mustard splutters add this garnish to the kootu.
  8. This kootu can be used as an accompaniment with sambhar/rasam or if made in a more watery consistency can be mixed with plain rice too.
