Ingredients:
• 1 cup – yellow pumpkin, potatoes, carrots, beans, peas (all cut into similar sized cubes)
• 1/2 cup – moong dal
• 4-5 – Green chillies
• 10-12 – pepper Corns
• 3 tbsp – Coconut
• Curry leaves, a few
• 1 tbsp – oil
• 2 tsp – Urad Dal
• 2 tsp – mustard
• Salt to taste
• Turmeric powder, a pinch
Method:
- Pressure cook all the vegetables with the moong dal, add a little salt and turmeric powder.
- Grind the coconut, green chillies and pepper corns to a smooth paste.
- Once the veggies and dal are cooked, transfer to a kadai.
- Then add the ground paste and cook till the raw smell disappears.
- The kootu should have a semi-solid consistency, so add minimum water while cooking the veggies.
- Heat oil in a small fry pan, add the curry leaves, mustard and urad dal.
- When the mustard splutters add this garnish to the kootu.
- This kootu can be used as an accompaniment with sambhar/rasam or if made in a more watery consistency can be mixed with plain rice too.
