
Ingredients:
• 2 – spring onions, ends trimmed
• 4 tbsp – peas
• Salt to taste
• 1/2 tsp – pepper powder
• 100 g – red pumpkin, grated
• 2 – carrots, grated
• 100 g – cheese cubes
• 4 – eggs
Method:
- Pre-heat the oven to 180 C.
- Chop the spring onions and put them in a bowl.
- Add the peas to the bowl.
- Grate the red pumpkin and add it to the bowl.
- Grate the carrot and add it to the bowl.
- Crumble cheese cubes with hands and add to the bowl.
- Whisk eggs separately and add to the bowl.
- Add salt and pepper powder, and mix everything well.
- Coat a round oven-proof dish with oil. Pour out the ingredients into the dish.
- Place the dish in the oven for 30 mins or until the egg is set.
- Serve with toasted bread.
