Ingredients:
• 5 cups – Bread crumbs
• 1/2 cup – Butter, melted and cooled
• 2 tbsp – Butter
• 1 tsp – Cinnamon powder
• 1/2 tbsp – Cornflour Corn starch
• 4 – Eggs, beaten
• 1 tbsp – Lemon essence, Lemon zest
• 3 tbsp – Lime Juice
• 4 cups – Milk scalded
• 1 tbsp – Nutmeg powder
• 1 cup – Raisins
• Salt to taste
• 1/2 cup – Sugar
• 1 cup – Hot water.
Method:
- Preheat the oven to 350 degrees F (175 degrees C).
- In the meanwhile spray an 8×11 inch casserole with a nonstick spray.
- Then combine the bread cubes, 1 cup sugar, salt, cinnamon, nutmeg and the raisins in a large bowl.
- In another bowl, blend the milk, melted butter, and eggs.
- Now mix the all the ingredients together and pour the mixture into the casserole dish.
- Then pour hot water into a baking pan and place the casserole dish in it about 1/3 up the side of the casserole dish. Bake for 45 minutes.
- Now in a small saucepan, combine 1/2 cup sugar, cornstarch, 1 cup hot water, 2 tbsps butter, lemon juice, and lemon zest.
- Cook on medium heat until it thickens.
- Stir continously to avoid scorching.
- Serve with the bread pudding.
