Ingredients:
• 1 cup – flour
• 1 1.5 cups – grated Carrot
• 1.5 cup – vegetable oil
• 1.5 cup – Wheat germ (finely powdered)
• 3 – eggs
• 1.5 cup – Walnuts (chopped)
• 1.5 cup – Pineapple crushed
• 2/3 cup – Honey
• 1 tsp – bicarbonate of soda
• 1 tsp – Cinnamon powdered
• 1 tsp – Nutmeg powdered
• To garnish:
• Almond and glace Cherries
Method:
- Sieve flour, wheat germ powder, bicarbonate of soda, nutmeg, and cinnamon powder.
- Beat together lightly beaten eggs, honey and oil.
- Add to the sieved ingredients. Continue beating until smooth.
- Stir in grated carrot, crushed and well drained pineapple and chopped walnuts.
- Mix well and pour into a greased lamington tin.
- Decorate with almonds and glaced cherries. Bake at 180 degree C for 35-40 minutes.
- Cool in tin for 5-8 minutes and turn out on a wire rack for further cooling.
- Cut into squares and serve.
