Ingredients:

• 1 cup – flour
• 1 1.5 cups – grated Carrot
• 1.5 cup – vegetable oil
• 1.5 cup – Wheat germ (finely powdered)
• 3 – eggs
• 1.5 cup – Walnuts (chopped)
• 1.5 cup – Pineapple crushed
• 2/3 cup – Honey
• 1 tsp – bicarbonate of soda
• 1 tsp – Cinnamon powdered
• 1 tsp – Nutmeg powdered
• To garnish:
• Almond and glace Cherries

Method:

  1. Sieve flour, wheat germ powder, bicarbonate of soda, nutmeg, and cinnamon powder.
  2. Beat together lightly beaten eggs, honey and oil.
  3. Add to the sieved ingredients. Continue beating until smooth.
  4. Stir in grated carrot, crushed and well drained pineapple and chopped walnuts.
  5. Mix well and pour into a greased lamington tin.
  6. Decorate with almonds and glaced cherries. Bake at 180 degree C for 35-40 minutes.
  7. Cool in tin for 5-8 minutes and turn out on a wire rack for further cooling.
  8. Cut into squares and serve.
