
Ingredients:
• 1/2 kg – Okra
• 1 – onion, large, chopped
• 1 tsp – ginger, Garlic paste
• 2 – green chillies, slit opened
• A few – Curry leaves
• 1/2 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 1/2 tsp – Cumin seeds
• Salt
• Oil
• To roast and grind:
• 1 tbsp – Coriander seeds
• 1 tsp – Mustard Seeds
• 1 tsp – Poppy Seeds
• 2 tbsp – desiccated Coconut
• 4 – dry Red Chilli
Method:
- Chop the okras into 1 inch pieces
- Heat a little oil and fry okras until half done and keep aside
- Meanwhile, roast and grind coriander seeds, poppy seeds, mustard seeds, desiccated coconut and dry red chillies to a fine powder and keep aside
- Heat enough oil, splutter the mustard seeds, urad dal, curry leaves, cumin seeds and add the chopped onions, ginger garlic paste and slit green chillies.
- Saute until the onions turn translucent
- Add the okra pieces, freshly grounded spice powder, salt and simmer the vegetables till fully done.
- Serve hot.
