
Ingredients:
• 4 oz – Cheddar cheese (grated)
• 8 oz- Shredded Chicken
• 5 oz- Spinach
• 2 tbsp – oil
• 1 medium Onion
• 1 tbsp – flour
• 6 cups – stock (chicken or veg)
• 1/4 tbsp – Cream (beat with a fork )
• 1 tbsp – soya sauce
• black pepper to taste
• salt to taste
Method:
- Boil spinach in 3/4 cup water.
- Shred the chicken.
- Grind spinach, half of the shredded chicken and half of the cheese together.
- Mix rest of the cheese and chicken in the stock and let it simmer in a frying pan.
- Then add the ground items to the mixture.
- Add soy sauce and half of the cream.
- Fry thinly cut onions with the flour and add in the soup.
- Serve hot with 1 tsp cream on each serving.
