Ingredients:

• 4 oz – Cheddar cheese (grated)
• 8 oz- Shredded Chicken
• 5 oz- Spinach
• 2 tbsp – oil
• 1 medium Onion
• 1 tbsp – flour
• 6 cups – stock (chicken or veg)
• 1/4 tbsp – Cream (beat with a fork )
• 1 tbsp – soya sauce
• black pepper to taste
• salt to taste

Method:

  1. Boil spinach in 3/4 cup water.
  2. Shred the chicken.
  3. Grind spinach, half of the shredded chicken and half of the cheese together.
  4. Mix rest of the cheese and chicken in the stock and let it simmer in a frying pan.
  5. Then add the ground items to the mixture.
  6. Add soy sauce and half of the cream.
  7. Fry thinly cut onions with the flour and add in the soup.
  8. Serve hot with 1 tsp cream on each serving.
