Ingredients:

• chow-chow – 1
• 1 – medium size Carrot
• 10 – green beans
• 1 – small Potato
• 1 cup – plain yogurt
• 1/2 packet – Tofu
• 1/2 tsp – Rice
• 4 – Green chilli
• 1 tsp – Cumin seeds
• 1 tsp – salt
• Curry leaves – a few

Method:

  1. Heat oil in a pan and saute the ginger paste for 2 minutes.
  2. Add the onions and tomatoes and cook until they soften.
  3. Now add the diced carrots and avocado to it. Add the turmeric, coriander and red chillies
  4. Then add 1 cup of water so that it softens completely.
  5. Now add the coconut milk and salt to taste.
  6. Cover with a lid and cook for 5 mins.
  7. Serve hot.
