Ingredients:
• Baby Potatoes – 1/2 kg
• Medium sized Onions – 4
• Tomatoes – 3
• Turmeric powder – 1 tsp
• Red Chilli powder – 2 tsps
• Salt to taste
• Sugar – 1 tsp
• Cumin seeds – 2 tsp
• Bay Leaves – 3
• Coriander leaves little
• Oil -1/4 cup
• Ginger – 1 inch piece
Method:
- Boil and peel baby potatoes (one whistle in pressure cooker).
- Grind sliced onions, ginger and cumin seeds to a fine paste.
- In a pan heat oil and sprinkle little salt over the potatoes.
- Add potatoes and fry till it becomes slightly red.
- Empty fried potatoes on to a dish. Fry the remaining potatoes
- In the same oil, add bay leaves, ground masala paste and fry lightly.
- Add red chilli powder, sugar and fry till the raw smell goes.
- Add fried potatoes, turmeric powder and salt to taste.
- Cover and let it simmer for 5 minutes.
- Arrange on a serving dish and garnish with finally chopped coriander leaves.
- Serve with parattas or rotis or puris.
