Ingredients:

• Baby Potatoes – 1/2 kg
• Medium sized Onions – 4
• Tomatoes – 3
• Turmeric powder – 1 tsp
• Red Chilli powder – 2 tsps
• Salt to taste
• Sugar – 1 tsp
• Cumin seeds – 2 tsp
• Bay Leaves – 3
• Coriander leaves little
• Oil -1/4 cup
• Ginger – 1 inch piece

Method:

  1. Boil and peel baby potatoes (one whistle in pressure cooker).
  2. Grind sliced onions, ginger and cumin seeds to a fine paste.
  3. In a pan heat oil and sprinkle little salt over the potatoes.
  4. Add potatoes and fry till it becomes slightly red.
  5. Empty fried potatoes on to a dish. Fry the remaining potatoes
  6. In the same oil, add bay leaves, ground masala paste and fry lightly.
  7. Add red chilli powder, sugar and fry till the raw smell goes.
  8. Add fried potatoes, turmeric powder and salt to taste.
  9. Cover and let it simmer for 5 minutes.
  10. Arrange on a serving dish and garnish with finally chopped coriander leaves.
  11. Serve with parattas or rotis or puris.
