Ingredients:
• Small Brinjals – 10-12
• Onion – 1, chopped
• Fresh Coconut – 2 tbsp
• Peanuts – 3 tbsp
• Sesame seeds – 2 tbsp
• Dry Red Chillies – 3-4
• Green chillies – 3
• Urad Dal – 1 tsp
• Mustard Seeds – 1/2 tsp
• Cumin seeds – 1/2 tsp
• Tamarind paste – 2 tbsp
• Curry leaves – a few
• Turmeric – a pinch
• Oil- 2-3 tbsp
• Water – 3/4 cup
• Salt – to taste
• Cilantro for garnishing
Method:
- Slit brinjals till 3/4 length so that the stalk remains intact. Deep fry in oil and keep aside.
- Roast peanuts, sesame seeds lightly and grind with red chillies and coconut into a paste.
- In a pan, heat oil. Add mustard seeds, cumin seeds, urad dal and curry leaves.
- After mustard seeds splutter, add onions.
- Once onions turn golden brown, add peanut paste, green chillies, turmeric powder and salt. Cook for 2-3 minutes.
- Then, add tamarind paste and water. Once the water starts to boil, add brinjals and let it simmer till the gravy thickens.
- Garnish with coriander leaves.
