Ingredients:

• Small Brinjals – 10-12
• Onion – 1, chopped
• Fresh Coconut – 2 tbsp
• Peanuts – 3 tbsp
• Sesame seeds – 2 tbsp
• Dry Red Chillies – 3-4
• Green chillies – 3
• Urad Dal – 1 tsp
• Mustard Seeds – 1/2 tsp
• Cumin seeds – 1/2 tsp
• Tamarind paste – 2 tbsp
• Curry leaves – a few
• Turmeric – a pinch
• Oil- 2-3 tbsp
• Water – 3/4 cup
• Salt – to taste
• Cilantro for garnishing

Method:

  1. Slit brinjals till 3/4 length so that the stalk remains intact. Deep fry in oil and keep aside.
  2. Roast peanuts, sesame seeds lightly and grind with red chillies and coconut into a paste.
  3. In a pan, heat oil. Add mustard seeds, cumin seeds, urad dal and curry leaves.
  4. After mustard seeds splutter, add onions.
  5. Once onions turn golden brown, add peanut paste, green chillies, turmeric powder and salt. Cook for 2-3 minutes.
  6. Then, add tamarind paste and water. Once the water starts to boil, add brinjals and let it simmer till the gravy thickens.
  7. Garnish with coriander leaves.
