Ingredients:
• 10 to 12 – Bhendi, cut into small round pieces
• 1 – Small onion, finely chopped
• 1 – Small tomato, finely chopped
• A pinch of Garam Masala
• A pinch of coriander powder
• A pinch of cumin powder
• A pinch of amchur or dry Mango powder
• A pinch of Turmeric powder
• A pinch of Red Chilli powder
• 2 to 3 tsp – oil for frying
• Salt to taste
Method:
- Heat a little oil in a pan and fry the bhendi.
- Once done, take it out and keep aside. (Ensure that this is not Deep Fry).
- In the same oil, add finely chopped onions and fry till it becomes slightly brown.
- Then add the chopped tomatoes and all the powders – garam masala, coriander powder and cumin powder, amchur, turmeric powder, and red chilli powder.
- Add the fried bhendi to this masala, salt to taste and fry for two minutes.
- Serve hot with rotis or puris.
