Ingredients:

• 10 to 12 – Bhendi, cut into small round pieces
• 1 – Small onion, finely chopped
• 1 – Small tomato, finely chopped
• A pinch of Garam Masala
• A pinch of coriander powder
• A pinch of cumin powder
• A pinch of amchur or dry Mango powder
• A pinch of Turmeric powder
• A pinch of Red Chilli powder
• 2 to 3 tsp – oil for frying
• Salt to taste

Method:

  1. Heat a little oil in a pan and fry the bhendi.
  2. Once done, take it out and keep aside. (Ensure that this is not Deep Fry).
  3. In the same oil, add finely chopped onions and fry till it becomes slightly brown.
  4. Then add the chopped tomatoes and all the powders – garam masala, coriander powder and cumin powder, amchur, turmeric powder, and red chilli powder.
  5. Add the fried bhendi to this masala, salt to taste and fry for two minutes.
  6. Serve hot with rotis or puris.
