Ingredients:

• 150 g – Rice flour
• 2 -Eggs
• 75 g -Sugar
• 60 ml – Coconut Milk
• 3 tbsp – Butter ( melted )
• 2 tsp – Baking powder
• 1 tsp – Cardamom powder
• 2 tbsp – Fresh, grated coconut.

Method:

  1. Preheat the oven to 180 degree Celsius.
  2. Mix the rice flour, baking powder and sugar in a large bowl.
  3. Beat in the eggs, cardamom powder and coconut milk into the mixture.
  4. Now add the melted butter into the rice flour mixture.
  5. Grease and line four ramekins.
  6. Pour the mixture equally into the ramekins and sprinkle the grated coconut on top of it.
  7. Bake in the preheated oven for 30 to 40 minutes or until skewer inserted comes out clean.
  8. Cool it in the wire rack for about 5 mins.
  9. Serve while warm.
