
Ingredients:
• Soya chunks – 1 cup
• Lauki pieces (bottle gourd) peeled and cut into small pieces – 3 cup
• Oil – 2 tbsp
• Garlic paste – 1 tsp
• Roasted Jeera powder – 1 tsp
• Coriander powder – 1 tbsp
• Haldi powder – 1/2 tsp
• Tomato puree – 2 tbsp
• Salt to taste
Method:
- Soak the soya chunks in hot salted water for 10-15 mins.
- Once the soya chunks have swelled in the water, drain out the soaked soya from the water and squeeze out the excess water.
- Heat the oil in a pressure cooker and fry the soya granules in the oil for 2-3 mins.
- Now, mix in the lauki pieces and stir fry for a minute.
- Lower the heat and mix in the spices, garlic paste and the tomato puree.
- Cook and stir for a further 2-3 mins.
- Add half cup water and salt to taste and pressure cook for 5-6 mins. or until the soya chunks are softened and lauki is also cooked.
- You could adjust the consistency according to your choice. If you want to enjoy the preparation with rice then keep a little gravy.
- But if you want to eat it with chapattis they make the preparation dry.
