Ingredients:

• 250 g – Brinjal
• 250 g – Fenugreek leaves
• 1 – Onion
• 1 – Tomato
• 1 tsp – ginger-garlic paste
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1/4 tsp – Turmeric powder
• Salt
• Oil

Method:

  1. Heat oil in a pan. Add chopped onion and fry
  2. When the onion turn brown, add chopped tomatoes, salt and spices
  3. When the mixture boils, add chopped brinjal, stir well and cover till brinjal is cooked
  4. When the brinjals are done, add the fenugreek leaves
  5. Mix well and cook for 5 mins
  6. Serve with chapati
