Ingredients:
• 100g – Brinjal
• 2 tbsp – oil
• 1 pinch – Hing
• 1 tbsp – mustard
• Curry leaves
• Coriander leaves
• 1 pinch – Turmeric powder
• 2 – Tomato
• Salt to taste
• For frying:
• 2 tsp Dhania
• 1 tsp Bengal Gram dal
• 5 Red Chillies
• 2 tsp Coconut
• A little Ginger
Method:
- Wash and cut brinjal into long thin slices.
- Heat oil in a kadai. Add the mustard, hing and curry leaves.
- Add the brinjal, cook till they are soft.
- Add the tomato, turmeric powder, and salt
- Boil the tur dal
- Fry the dhania, Bengal gram, red chillies, coconut and ginger in 1/2 tsp oil. Grind them in the mixer.
- Add this ground mixture and boiled dal to the cooked brinjal, add water.
- Garnish with coriander leaves.
- Serve it with hot rice.
