Ingredients:

• Brinjal – 500 g
• Prawns – 500 g
• Sweet Corn – 100 g
• Pea – 100 g
• Small Onion – 2 (finely chopped)
• Garlic – 1 tsp
• Tomato – 2
• Egg – 1 (optional)
• Soy sauce – 1 tbsp
• Coriander powder – 1 tsp
• Allspice – 1 tsp
• Red pepper flakes – a pinch
• Oil – 3 tbsp

Method:

  1. Cut the brinjals into small, square pieces. Sprinkle some salt and keep aside.
  2. Heat some oil in a frying pan and fry the brinjal pieces until they soften up (about 5 minutes). Keep aside.
  3. Add the rest of the oil to the pan. Fry the onions and garlic until they becomes translucent.
  4. Add the prawns and tomatoes and fry for 5 minutes.
  5. Add the sweet corn, peas and fried brinjals and continue frying.
  6. Add coriander powder, soy sauce and salt to taste. Stir and cook until all the ingredients are tender.
  7. Add allspice and red pepper flakes.
  8. Whisk an egg and add to the pan for binding (optional).
