
Ingredients:
• Brinjal – 500 g
• Prawns – 500 g
• Sweet Corn – 100 g
• Pea – 100 g
• Small Onion – 2 (finely chopped)
• Garlic – 1 tsp
• Tomato – 2
• Egg – 1 (optional)
• Soy sauce – 1 tbsp
• Coriander powder – 1 tsp
• Allspice – 1 tsp
• Red pepper flakes – a pinch
• Oil – 3 tbsp
Method:
- Cut the brinjals into small, square pieces. Sprinkle some salt and keep aside.
- Heat some oil in a frying pan and fry the brinjal pieces until they soften up (about 5 minutes). Keep aside.
- Add the rest of the oil to the pan. Fry the onions and garlic until they becomes translucent.
- Add the prawns and tomatoes and fry for 5 minutes.
- Add the sweet corn, peas and fried brinjals and continue frying.
- Add coriander powder, soy sauce and salt to taste. Stir and cook until all the ingredients are tender.
- Add allspice and red pepper flakes.
- Whisk an egg and add to the pan for binding (optional).
