Ingredients:
• Paneer – 100 gm
• small tender Brinjals – 1/2 kg
• oil – 4 tbsp
• Coriander seeds – 3 tsp
• Bengal Gram (Channa) Dal – one and a half tsp
• black gram (Urad) Dal – one and a halftsp
• Red Chillies – 6
• Asafoetida – 1/2 tsp
• Mustard Seeds – 1 tsp
• salt to taste
Method:
- Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
- Grate the paneer.
- Heat 2 tsp of oil and roast coriander seeds, Bengal gram Dal, black gram Dal, red chillies and asafetida.
- Cool and powder coarsely.
- Mix the powder with salt and paneer.
- Stuff the brinjals with this mixture.
- Heat the remaining oil and add mustard.
- When it crackles, add the brinjals.
- Cover and cook slow flame till brinjals are tender.
- Serve hot with steamed rice and Dal.
