Ingredients:

• 1 – small Broccoli (cleaned and chopped)
• 1 cup – Rice (soaked for 10 minutes and drained well)
• 1 – Onion (medium size, chopped into thin slices)
• 1 – Bay Leaf
• 1 tsp – Ghee or Butter
• 2-3 – tsp – oil
• 5-6 – Green chillies
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• salt to taste
• Powder the following: 2-3 – Cloves
• 1″ Cinnamon stick
• 1 pod – Cardamom

Method:

  1. Heat oil in a vessel large enough to cook the rice.
  2. Drop the bay leaf in it.
  3. Add the sliced onions, ginger paste and garlic paste.
  4. Fry until the onions are soft and the raw smell of ginger-garlic paste is gone.
  5. Add the chopped broccoli, salt, green chillies and powdered masala of cloves, cinnamon and cardamom.
  6. Fry for about 5 minutes.
  7. Add ghee or butter.
  8. Add the rice and fry until it starts to turn brown.
  9. Add 2.5 cups of water to the rice and cover.
  10. Keep stirring in between, adding more water if the rice needs to cook for some more time.
  11. Serve the rice with onion, tomato and cucumber raita.
