
Ingredients:
• 2 cups Rice (preferably basmati Rice)
• 1 big Onion (finely vertically sliced)
• 5 green Cardamoms
• 1 small stick Cinnamon
• 1 tsp – Red Chilli powder
• 4 cups – water
• 1 tsp – Cumin seeds
• 4 to 5 tbsp – oil
• 2 Bay Leaves
• 3 Cloves
• salt to taste
Method:
- Pick, wash and soak the rice in water for 30 minutes.
- Heat oil in a heavy bottom vessel.
- Add cumin seeds, cloves, cardamoms, cinnamon and bay leaves.
- Fry for a few seconds and add the sliced onions.
- Fry the onions on a low flame till golden brown.
- Once the onions turn golden, add red chillie powder and fry for a minute.
- Add the soaked rice (water discarded) and mix well.
- Add 4 cups water, salt to taste and mix once. Give it a boil.
- After the first boil simmer. Cover with a lid.
- Mix once or twice while the rice is being cooked.
- Cook till the rice is done. Serve hot.
