
Ingredients:
• 3 – large Capsicum
• 4 – medium sized, white Brinjals
• 1 – large Tomato
• 1 – medium sized Onion
• 2 tbsp – freshly grated Coconut
• 1 tsp – chilli powder
• 1/4 tsp – Turmeric powder
• 1 tbsp – Garam Masala powder
• A few – Curry leaves
• Salt to taste
• 2 tbsp – oil
Method:
- Deseed the capsicums and cut them into cubes.
- Cube the brinjals too. Immerse them in cold water.
- Heat the oil in a kadai and fry the finely minced onion to a golden brown.
- Then add the curry leaves.
- Now mix in the finely cut tomato and the powders. Fry for sometime.
- Drain the capsicum and brinjal cubes from the water and add it to the masala in the kadai.
- Pour in a cup of water and add salt.
- Simmer till cooked and dry.
- Just before serving sprinkle the grated coconut on the top.
