Ingredients:

• For pudding: Milk – 1/2 litre
• Sugar – 10 tbsp
• Egg – 5
• Vanilla essence – 5 drops
• Butter for greasing – 1 tsp
• For caramel syrup: Sugar – 7 tbsp
• Water – 1/2 cup

Method:

  1. Pre-heat an oven to 180 degrees C.
  2. Grease a medium-sized oven-safe bowl and keep aside.
  3. Beat the eggs and add vanilla essence, sugar and milk and keep aside.
  4. In a heavy-base saucepan, heat the sugar to prepare the syrup. When the sugar melts and becomes brownish, pour water and stir continuously until it thickens.
  5. Pour this mixture into the greased bowl. Add the custard mix carefully on top of the caramel syrup and bake in the pre-heated oven for 30 minutes or until cooked.
  6. Insert a skewer to check. When the pudding cools, refrigerate for an hour before serving.
