
Ingredients:
• 2 cups – minced chicken, cooked
• 1 tsp – Coriander leaves
• 1 tsp – pepper or chilli powder
• 4 – eggs
• 1 – egg, beaten
• 1 tbsp – Milk
• 1 tsp – green chillies, minced
• To taste – oil and salt
Method:
- Line 4 small muffin pans with greaseproof paper. Brush a little oil on each.
- Mix chicken, egg, milk, chillies, coriander leaves, salt and pepper.
- Divide mixture equally, among the muffin pans and press down well.
- Make a hollow in the centre of chicken mixture.
- Break one egg carefully, into each hollow.
- Bake in a pre-heated oven at 350 degrees F for 8 to 10 minutes, till the eggs are set.
- Remove carefully and serve with toast.
