Ingredients:

• basmati Rice – 1 cup
• Lemon – 2 medium sized
• Turmeric powder – 1 tsp
• Green chillies – 9
• Red Chillies – 2
• cooking oil – 2 tbsp
• grated fresh Carrot – 2 tbsp
• grated fresh Coconut – 1 tbsp
• freshly cut Coriander leaves – 1 tbsp
• fresh Curry leaves – 2 strings
• fried ground nuts – 2 tbsp
• salt to taste
• For Seasoning:
• Mustard Seeds – 1 tsp
• Bengal Gram dal – 2 tsp
• urad dhal – 2 tsp
• Jeera seeds – 1/2 tsp
• Asafoetida powder – 1 pinch

Method:

  1. Cook rice and allow it to cool in a broad bowl or basin.
  2. Heat oil, fry the seasonings and add red chillies, green chillies, curry leaves and fry for a minute.
  3. Add turmeric powder, asafoetida powder, grated carrot, grated coconut and salt .
  4. Squeeze lemon juice and stir well.
  5. Pour over the cooled rice and mix well.
  6. Garnish with finely chopped coriander leaves and fried ground nuts.
  7. Serve hot with green chutney.
