
Ingredients:
• basmati Rice – 1 cup
• Lemon – 2 medium sized
• Turmeric powder – 1 tsp
• Green chillies – 9
• Red Chillies – 2
• cooking oil – 2 tbsp
• grated fresh Carrot – 2 tbsp
• grated fresh Coconut – 1 tbsp
• freshly cut Coriander leaves – 1 tbsp
• fresh Curry leaves – 2 strings
• fried ground nuts – 2 tbsp
• salt to taste
• For Seasoning:
• Mustard Seeds – 1 tsp
• Bengal Gram dal – 2 tsp
• urad dhal – 2 tsp
• Jeera seeds – 1/2 tsp
• Asafoetida powder – 1 pinch
Method:
- Cook rice and allow it to cool in a broad bowl or basin.
- Heat oil, fry the seasonings and add red chillies, green chillies, curry leaves and fry for a minute.
- Add turmeric powder, asafoetida powder, grated carrot, grated coconut and salt .
- Squeeze lemon juice and stir well.
- Pour over the cooled rice and mix well.
- Garnish with finely chopped coriander leaves and fried ground nuts.
- Serve hot with green chutney.
