Ingredients:

• For the stuffing: 1 cup – carrots, grated
• 2 – green chillies, finely chopped
• a pinch of Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – chat masala
• 1 tsp – Cumin seeds
• salt to taste
• 1 tsp – oil
• For the dough: 1 cup – whole Wheat flour
• water as required
• salt to taste
• Ghee for parathas

Method:

  1. For the dough: Mix salt to the wheat flour.
  2. Add water bit by bit and knead a pliable dough. Keep aside for 30 minutes.
  3. For the stuffing: Heat oil in a pan and add the cumin seeds. When the seeds splutter, add the green chillies and saute.
  4. Add grated carrots and saute.
  5. Add turmeric powder, coriander powder and salt to taste and cook for some time.
  6. Add chat masala and mix well.
  7. When the stuffing is ready, let it cool. Then make small balls out of the stuffing and keep aside.
  8. For the flat bread: Take lemon-sized dough balls and roll out into 3-inch diameter discs. Add the stuffing balls, seal from all sides and pinch off the excess dough.
  9. Flatten the stuffed ball using your palm and dust with flour.
  10. Roll out into 6-inch diameter disc.
  11. One by one, place the discs on a hot griddle and let them get a few brown spots on one side.
  12. Flip the flat bread and cook the other side.
  13. Apply ghee on the top side and flip again. Cook both the sides and transfer onto a serving plate.
  14. Serve with raita or plain yogurt.
