Ingredients:

• 1 cup – chopped Celery
• 2 grapefruits, sliced
• 2 red Capsicum (deseeded and membrane removed)
• 4 oranges, sliced
• 4 tbsp – Olive oil
• 2 tbsp – Vinegar
• 2 tbsp – blackcurrant juice

Method:

  1. Toss the celery, grapefruit, red capsicum and oranges in a salad bowl.
  2. Sprinkle the olive oil, vinegar and black currant juice.
  3. Mix well and serve immediately.
