Ingredients:

• 2 cups – Celery stem
• 2 – potatoes, chopped
• 1 – onion, chopped
• 1 tbsp – Olive oil
• To taste – salt
• To taste – pepper
• 1/4 cup – red Quinoa

Method:

  1. Cook quinoa with half a cup of water and salt in a microwave safe bowl for 10 minutes on high in a microwave oven.
  2. In another bowl, add olive oil and chopped onions. Cook for 5 minutes, until the onion turns translucent (stir in between).
  3. Add the celery pieces and chopped potatoes to the onions, cook for 5 minutes.
  4. Finally add enough water, salt and pepper powder. Cook in high for 15 minutes (stir in between).
  5. Take the bowl out, blend as soup with a hand blender.
  6. Reheat the soup, along with cooked quinoa for 3 minutes in high.
  7. Serve warm, along with toasted breads or any grilled meat.
