Ingredients:

• semolina – 100 grams
• Milk – 1 cup
• Water – 1 cup
• Sugar – 50 grams
• Cardamom Powder – a pinch
• Clarified Butter – 4 tbsp
• Cashew-nuts – 10 nos
• Raisins – 10 nos

Method:

  1. In a deep bottomed pan, boil milk along-with sugar and cardamom powder. Boil till it reduces to half the volume and thickens.
  2. While, the milk is being boiled, in a separate heated pan, dry roast semolina, till light golden brown. It will be done in about 5 minutes. Be careful not to burn it. Keep aside.
  3. In the same pan heat ghee and sauté cashew and raisins till they become fully blown-up.
  4. Now to the reduced milk add the semolina slowly and mix in thoroughly to avoid lump formation.
  5. Add in the raisins and cashew and your semolina payasam is ready.
